If you hadn’t already guessed “What Do Vegans Eat?” is going to become a weekly series! I really enjoy finding a collection of great looking foods to try and share with you all. Hopefully you feel the same way!

Pictured is the giant banana muffin I made yesterday! I followed this recipe however I did change the ingredients slightly, I halved the amount of sugar and used a mixed spice rather than separate nutmeg and cinnamon spices. I also used almond milk instead of coconut milk as I didn’t have any in, but I doubt it makes any real difference; its so delicious! Also really sweet so halving the amount of sugar is the way to go! Mine became a giant muffin upon realising that I don’t have any muffin tin things, just a cake tin. I was worried it wouldn’t work out, but I will definitely be making this again in the future.
